When applied to Simple Harmonic Oscillators, the amplitude is the magnitude of the maximum displacement from the rest position of the oscillator.

Over one period of oscillation the oscillator will move vary in its displacement from its equilibrium position by a distance equal to the amplitude on one side to a distance equal to the amplitude on the other side of the equilibrium position, passing through the equilibrium position to do so.
